Putting Local on the Menu with Anthony Flaccavento

With the help of the Value Chain Cluster Initiative (VC2) and the West Virginia Food and Farm Coalition, we brought on Anthony Flaccavento from Rural Scale to give an online seminar (webinar) about how restaurants can incorporate more local foods into their menus.  He discussed the 5 best practices and gave an overview of the Local Foods Cost Calculator, a tool he developed in tandem with chefs and restaurants owners. The calculator helps buyers see the price breakdown per plate or serving and understand how much it will affect their bottom line.
